Chef Alessandro Basciu, after spending years in the best oriental and fusion restaurants, has decided to put his idea of cuisine into practice and show his unconventional ideas, a culinary journey through flavors and authenticity.
Our sushi is prepared using only AUTHENTIC rice grown in the Vercelli area, an ancient type of rice selected in Italy and cultivated since the early twentieth century, whose characteristics – pearly color, rounded shape and crunchy consistency – blend perfectly with our raw materials.
All of the fish we treat is of known origin, traceability and it is blast-chilled either on site, or at the source, according to the current regulations CE852 / 2004 at -20 for 24 hours, to protect the health of the consumer and guarantee a constant freshness of the raw meat, 100 % NATURAL (no glazing, no gas and no dyes).
